'Date Night' Date Bars & Pantry Raids


Sounds exciting, right?  Date night date bars & pantry raids...it really was just a beautiful, quiet Saturday evening at home after the first week back to work for the New Year.


It was time to clean house, pantry and all, and test out a new easy recipe!! Delicious no-bake date nut bars.  More on that soon....the pantry raid continues. 



I needed to get back in the swing of things and make a menu plan for the week, so I needed to get in there and see what we had, before heading to the store.

Just typing that makes me think I'm quickly becoming my Dad.  He would have spurts when he would raid the kitchen. Finding doubles or triples of things, all either opened or expired, and this would drive him crazy.  My Mom wasn't the most organized chef, so this was perfectly fine to her, I think the thought of feeding all those kids every night, was enough of a chore. 

Anyhow, I took everything out and realized, we had a lot of food.  What could I create this week?  My mind started envisioning warm, home cooked comfort meals, and I got excited!




Somehow over the holidays...crazy things made there way into the pantry.  We had lots of parties over the past few weeks, so that totally explains the junk food mysterious items.  Things like....potato chips, pretzels, wheat thins, cheez-its, cookies and candy! 

It was time to purge. 


Ahh!!! Sanity restored! Junk is gone. Once the pantry was organized, I got so into the date bars, that I forgot to post an after shot....oh well.  Feel free to use your imagination...think the Container Store ads.



Ok....so these bars are too good to even write about....a total must try!  They were adapted from the recipe from the blog, Oh She Glows.  She is a vegan blogger, and creates beautiful recipes.  You will find this no bake date bar recipe and much, much more.  My only change was that I added ground flax seed, but you can add a bunch of different ingredients.  Dried coconut, dark chocolate chips...the list is endless. 

I had to restrain myself from eating the whole pan...the oatmeal nut topping and sweet, googy middle from the date jam are the perfect combination.  The bottom crust holds together so well...and they are completely no bake!! A perfect breakfast treat or after school snack, they are sure to please the whole family. 


Speaking of family...my cousins and I had our annual Cousin Christmas get together on Friday at the Hoboken Bar & Grill.  They gave us the whole downstairs, and it was perfect! 



Susan and I got a little crazy setting up and I pretended to be a rocker....playing my air guitar with the menu.
