After enjoying a restful vacation week, my body was ready for some new recipes, healthy smoothies and hot tea.
I even got my husband Joe to start drinking green smoothies....this is a huge turn of events in our household! I'm so proud of you babe!
So I hope you're sitting down....I've found my new favorite dish....wait for it.....
Meatless meatballs!!!! And believe me, you will not miss the meat! These little balls of goodness are warm, tender and delicious covered in tomato sauce.
I've been working my way through Sarah Methany's book, 'Peas and Thank You' and this meatball gem came from her book. You can find her beautiful blog at peasandthankyou.com. They are made of lentils, oatmeal, onions, garlic, sun-dried tomatoes, Worcestershire sauce, and other spices.
Here's my lentils cooking away in the pot, I only had green, so that's what I used.
hello my little lentil friends....come to mama!! They soon go from just cooked lentils to
flavorful, lentil oatmeal mush....
which then quickly turns into healthy mini baked meatless meatballs!!
And then I inhaled them as soon as possible!!! These are 'amazeballz'!!!( for all you Giuliana Rancic fans out there!)
Next time, I'm making a double batch to freeze and keep on hand. Go check out Sara's book, it's already at our library, or pick up a copy on Amazon....you will love it! She has a great story, and makes wonderful meals for her family. She seems like someone you'd want to have as your friend, and love to hang out in her kitchen and have a cup of coffee.

The donuts look delicious. Next time pick up a dozen for me and my gang. We'll have the beet salad right after we gobble down the donuts.
