Made the most glorious granola on the planet.
Friends that received this for the holidays know what I'm talking about...hope you're enjoying it. Soon to be sold in a store near you or maybe just right here from the website.
And...wait for it....it's vegan (coconut oil) and sweetened only with a touch of pure maple syrup.
I've been crunching and munching my way through this latest batch all week long.
Other things I've been up too, walking all over town. It's the only exercise I'm in the mood to do. I think I just needed a break from the gym.
I've been walking through the campus at Steven's College and while everyone is away on break I feel like I've been transported out of the city and into a quiet zen meditation garden. Namaste. I'm even thinking about doing a bleacher workout at the stadium. My blogger friend Toni from Running, Loving, Living has been creating her own workouts using high school bleachers and it looks like a new and fun challenge.
I forget how nice it is to see the ground (not just sidewalk/cement), trees and not another soul on campus. The place is so quiet. From there I travel down to Castle Point Terrace, which has some of the nicest homes in town. They are all decorated for the holidays, and look fantastic.
Continuing on to the windy and cold waterfront, I wonder when spring will come. Brrr. Seats are wide open.
And of course the NYC view on a sunny afternoon always makes me smile.
