A while back someone asked for this recipe for these amazing
Vegan Chocolate Chip Oatmeal Cookies

They are adapted from the creative geniuses over at Vegan Cookies Invade Your Cookie Jar. But feel free to put your own spin on them. I play around a little with whole grain flours, less sugar, toasted nuts, and dried fruit. Whatever you have on hand will work. These babies have quite the sugar load, but no butter. Eat them at your own risk. These are my go to cookies to make these days for a special occasion.

Chocolate Chip Oatmeal Cookies
Adapted from
the book ‘Vegan Cookies Invade your Cookie Jar’
Prep
time: 15-20 minutes Cook time:
15-20 minutes
Yields: 18 large cookies or 24 medium size
Ingredients:
2 cups of oats (quick cook or old
fashioned)
2 cups of flour (I use a blend of
whole grains ie. whole wheat pastry, oat, spelt, etc.)
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2/3 cup of canola oil
2/3 cup of sugar (raw turbinato and
or white)
¾ cup firmly packed brown sugar
½ cup of non-dairy milk (unsweetened almond milk)
1 tablespoon ground flax seeds
1 teaspoon of pure vanilla extract
1 cup of shredded unsweetened
coconut
1 generous cup of vegan mini
chocolate chips (I use Enjoy Life brand)
1 cup of chopped toasted walnuts

Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
2.
In a medium size bowl, stir together
oats, flour, baking soda, baking powder, and salt. Set aside.
3.
In a large bowl, beat together oil,
sugar, brown sugar, non-dairy milk, flax seeds and vanilla.
4.
Fold in half the flour mixture to
moisten, then fold in remaining half.
Add in toasted nuts, coconut and chocolate chips, stir to combine. *See chef’s note below*
5.
For each cookie, drop ¼ cup of dough
(about the size of a golf ball) onto the cookie sheet. Leave enough room between cookies-about 2
inches apart. Cookies are huge, so you
can reduce this to make smaller cookies.
Dough will be kind of annoying, sticky and thick.
6.
Bake the cookies about 14-16 minutes,
depending on your oven, until the edges are lightly brown. Let cookies rest of cookie sheet for 5
minutes to set, before transferring them
to cooling racks to completely cool.
Chef’s
Note:
once the raw cookie dough is combined, let it sit for 5-10minutes before
forming into cookies. I’ve found this
dough to be very sticky to work with once combined. However, once it sits for a bit much easier!
