Looking for an easy way to eat more leafy greens? I know you are! Here's a ridiculously fast way to add a side of 'healthy' to any meal. Only 3 ingredients.
Three Ingredient Kale Salad
inspired by Engine 2 Cookbook (thanks Rip!)
kale: washed, stem removed and torn into bite size pieces
avocado: cut in half, pitted and skin removed
lemon or lime juice
Combine all ingredients in a bowl. Squeeze and mix with your hands...it's so fun! Get a little messy and play in the kitchen. This salad can be made in advance, which I think makes it taste even better. I prepare this in the morning and take it for lunch.
The lemon juice softens the kale and the creamy avocado is heavenly. Add a little salt and fresh ground pepper. It's that easy. Enjoy.
A perfect blend of real food that is easy to take to work or make quickly at home, after a long day.
Some other ways I like to use kale:
-raw in smoothies
-lightly sauteed on the stove top with sliced fresh garlic
-added to soups
-in whole grain salads cut into small ribbon strips
Why you should be eating more kale:
-Kale is a great detox food. Filled with fiber and sulfur, both keep your liver healthy.
-Kale is power packed with nutrients, vitamins, magnesium and folate.
-Kale is a powerful antioxidant to protect from various cancers.
-Kale is a great anti-inflammatory food & cardiovascular support.
So basically it's REALLY GOOD FOR YOU!!
