Hope everyone is having a peaceful weekend. Just a quick post of some healthy eats I've been enjoying lately.
Thanks to the new Netflix option on our TV we've been watching all these scare you to death health documentaries. One in particular really got us thinking, it was 'Fat, Sick & Nearly Dead' with Joe Cross, also known as @joethejuicer. The film was entertaining, mind blowing and so well done. It followed a normal guy who wanted to get healthier and drank juice for a month, just to see how his health would improve. It showed the power of raw fruit and vegetable juice. His life changed, he looked great and he inspired so many others to do the same. His message of clean living was so inspiring. Go plants!
Here are a few of my plates. Trying to add in more fiber and vegetables. My stuffed acorn squash with veggies, brown rice, walnuts and raisins.
The leftover brown rice stuffing made great lunch leftovers the next day on a bed of greens and a side of roasted broccoli.
And of course a few black bean brownies.
