Light Lentil Salad

Here's something to make your life easier. 

Avocado Lentil Salad



I'm so in love with lentils right now. Hello little protein pellets!

They take almost no time to cook and you can add them to just about anything.  I prepped a large batch this week to make multiple salads and morphed some into mini-lentil meatballs. 


This was a quick lunch, a bed of mixed greens, avocado, green lentils and a lemon vinaigrette.  I guess you can say I'm gearing up for St. Paddy's Day with all this green. Who am I kidding, I eat greens as much as I can...fiber, people, it's all about fiber and leafy greens. 

Sorry about the horrible iphone photos..ugh.  Working on getting a real camera, but the phone is so easy.

Other things I've been up to...

Healthy Hoboken Girl taught her first workshop to a small Hoboken women's group. 


I almost peed my pants, (speak for an hour..who am I?!!!) but nerves and all I did it anyway and felt amazing.  Personal growth..check! I placed a small reminder that spring is coming on each chair and spoke about health, wellness and your spring kitchen.  It was a beautiful way to start my day.  Thank you to Seasonal Health on Washington Street for hosting such a nice morning. 


We ended the workshop with a special sprout meditation and shared tea, coffee and my lemon zucchini muffins.  They went so fast, I never snapped a photo...but they were delicious.  You'll see a batch soon, a perfect brunch muffin.

  2. You did great Lynda, I'd never have dreamt you were nervous! It was a really fun session and the daffodil is brightening my kitchen, and clean sink ;), right now. See you at the next meet up :)
